Mouthwatering Monday: Breakfast Quiche

So easy peasy meals have been my go-to lately... which totally includes this delicious quiche that I made on a Sunday and had leftovers to heat up quick and easy in the am for the whole week. I love how customizable this recipe is. I added onion, maple sausage (delish), spinach, and cheddar cheese, but it really can be made with whatever your heart desires.

Also since we all know I'm the queen of procrastination it's no surprise this recipe takes about 10 minutes to prepare and 25 minutes to bake because who has time to spend a million hours in the I right?

As I was making this I realized how perfect this would be for Christmas morning, or the day after thanksgiving (when you really can't stand the thought of cooking but you don't want to deprive yourself of deliciousness), and since the holidays are fast approaching this is the perfect time to share it with you!

Blissfully Lively Breakfast Quiche

4 eggs

1 cup half and half

1/2 cup spinach

1/4 cup chopped onion

6 sausage links cooked & chopped

1/2 cup cheddar cheese

pie crust

dash of salt & pepper

Directions: Saute the spinach and onion on medium until browned. Add spinach and onion mixture, cheese, and sausage to the bottom of pie plate with pie crust already inside. In a medium bowl beat together eggs, half and half, and salt and pepper until combined. Add egg mixture to pie and bake at 375 for 35 mins!
